Chin-chin is quite simple to prepare and does not require much stress. It can be found on the streets, supermarkets and even the open markets.

Ingredients
2 cups of all-purpose flour
2 eggs
6 tbs butter
6 tbs granulated white sugar
1 tbs baking powder
1 tsp salt
Vegetable oil for frying

Preparation
In a dry, clean bowl, add dry ingredients like flour, sugar, baking powder, salt and mix properly.

Add butter in bits around the flour. Using your fingers, work butter into flour till you get a fine breadcrumb-like texture.

Make a hole in the middle, break and add the eggs.

Work eggs into the flour using both hands. Keep working egg into flour till if forms smooth dough.

Using a cutting board and a rolling pin, roll out the dough, just once and don’t stretch, then re-roll till it’s about an inch thick.

Using a sharp knife, cut into the dough vertically.

While cutting across the dough horizontally, preheat the oil.

Gently separate the cut dough.

Test the temperature of the oil by dropping in a small piece of dough; wait till it turns golden brown.

Add the rest in batches and avoid over-crowding. Fry for 3-6 minutes till it turns golden brown.

Once done, put in a sieve to drain excess oil. Allow to cool before eating.
